I'd seek the advice of a dietitian. People can throw their own advice at you, but a dietician would weigh you, measure your height, work out what your correct bmi is etc and give you some real advice.
Remember - if you were a full time vegan, you would not be consuming any cholesterol.

The loss will start slow @ first then will speed way up, then plateau again.

Maybe you don't have as much to loose as you think. Take you time and do it sensibly, you didn't add weight overnight.
Sounds like you are doing ok. I lost 40 pounds in a little over two months when I went veggie (all the way) Are you eating alot of carbs? I ate mostly raw fruits and veggies, or lighly steamed, with lots of brown rice and quinoa. Also, make sure the water you drink is of good quality. Tap water is awful, and caused you body to hold on to fat-from all of the chemicals in treated water. If you drink bottled water-make sure it is steam distilled or spring. Water labeled "purified" or "enhanced" is nothing more than tap water, and still has the chemicals in it. Good luck!
Just because your eating vegetables doesnt mean your eating right. There are calories in veggies and starches too. Eat nothing but pickles for a week and you'll lose weight too. The sugars in vegs is what makes you keep weight.
Few vegetarians are obese but certainly some are overweight. It is not a low-calories diet by no mean. 6 pounds is not bad at all if you are not too overweight. I go to the gym 4/5 times a week, I also eat very well and although I have toned a lot and look much better, I have not lost more than a couple pounds. Continue what you are doing and make sure you meals are small (%26lt;400 calories/4 times a day) and very well balanced, you will achieve an adequate weight ...super model size is not always the best for us and often requires starving yourself which is dangerous for your health, skin, hair...etc.

I think you are obsessing too much. From the sounds of your lifestyle, you should be at a very healthy weight. If you work out 4 to 6 times a day than you have probably developed some muscle as well.
Despite what some have stated, Being Vegan does not mean you are cholesterol free.
