What is your all time favorite vegetarian recipe?

Just curious... I need some new meal ideas. I don't eat meat or fish, and I only eat eggs when their in something, like bread or cookies.What is your all time favorite vegetarian recipe?
Cheese Enchiladas........that is if you eat cheese......

Bean Toatadas.......Piled high with everything!!!

Vegetable Noodle Soup

Nut and Cheese Loaf

Ratatouille

Oven Roasted Vegetables...

Baked Tofu with Teriyaki sauce

Baked Potato, topped with sauted veggies

Cheese and Roasted Red Pepper Paninis

My favourite is Falafel, its from the middle east and is kind of like a vegie patty, Ball shape, fried in oil, and is made mainly from crushed chick peas and parsley, Alot of vegetarians buy it ready from a lebanese restaurant or kebab shop, They mainly eat it in a sandwich (Pita Bread) with salad, or you can eat it on its own with a tahini sauce next to it

(sesame sauce). Here is a recipe for you:

Ok, I absolutely love www.vegcooking.com because they have amazing recipies for just about any ocassion and they're very easy, too!



Here's one of my very favorites:

Creamy Chive Mashed Potatoes

Rich mashed potatoes are the perfect side dish for most meals.



5 large potatoes, diced

1 cup liquid nondairy creamer (try Silk brand)

2 Tbsp. margarine

1/4 cup fresh chives, chopped

Salt and pepper, to taste



鈥?Place the potatoes in a large pot and cover with water. Bring to a boil and cook for 20 minutes.

鈥?Drain the potatoes, place in a bowl with the remaining ingredients, and mix until smooth.

鈥?Serve hot.



Makes 4 to 5 servings



And also these things are really delicious:

Buffalo Wing-Style 'Chicken'

If you want more heat from this dish, add cayenne pepper to the Shake-n-Bake mix. Serve it with vegan ranch dressing.



1 roll Chickettes, torn into chunky pieces

1 pkg. Shake-n-Bake Buffalo wing coating powder

1/4 cup vegetable oil (for low-fat version, use 1 or 2 Tbsp. of water or soy milk)



鈥?Put the Chickette pieces in the Shake-n-Bake plastic bag.

鈥?Pour in the oil and shake to coat. Add the coating powder and shake again.

鈥?Dump the nuggets onto a nonstick cookie sheet and bake for 20 minutes at 350掳F.

鈥?Serve hot.



Makes 4 servings

I also found a great recpie for meatless meatloaf on www.vegcooking.com. I HATED meatloaf when I still ate meat, but I love this recipe (go figure! lol). It's delish!
Any Chinese veggie stir fry that has lots of snow peas.
