I would like to have a family dinner for my new family...A cousin is vegetarian or a vegan not sure.?

My boyfriend and I have been together for a year, and I am wanting to have a dinner for them. Nothing fancy just homey and welcoming. My problem is my BF's cousin is a vegetarian. I have heard that he does not eat eggs either, soo I am guessing I need to find something w/o cheese and milk too. I need easy suggestions. I do not have a budget that can afford to buy all the fancy vegan and such items. Just something I can offer that will satisfy the cousins pallet and also others who like their hearty dishes. Can any one help on recipes and also enlightening me on some tips. I am looking for an en tree, appetizer and a dessert. I am a little intimidated by this, LOL I love my CHEESE. Have few veggie en trees but they contain cheese, milk all the good stuff. No gourmet and time consuming things please. Easy cheap and satisfying. Thanks ahead of time. RED CABBAGE WITH OLIVE OIL MARINADE

Makes 4 servings



Ingredients:

9 ounces (250 gram) red cabbage

3 Tablespoons vinegar

3 Tablespoon olive oil

1 Tablespoon sugar

2 teaspoon soy sauce

Dash of pepper



Methods:

1. Julienne cabbage. Blanch and drain.



2. Mix vinegar, olive oil, sugar, soy sauce, and pepper well.



3. Toss the cabbage in the vinegar mixture. Let stand until cool.



Notes: Be sure to drain cabbage very well before marinating.





TANGY ITALIAN MUSHROOMS

6 Servings



Ingredients:

2 cups fresh mushrooms (sliced)

陆-cup Fat Free Italian Dressing

1 large onion (chopped)

Butter spray



Methods:

Marinate mushrooms in dressing for at least 1 hour or overnight, stirring occasionally. In non-stick skillet, saut茅 onion in butter spray. Drain mushrooms and add to onions. Continue to cook over medium heat until mushrooms are tender, but not limp.





BAKED ONION RINGS

Serves 4



Ingredients:

2 egg whites

1 large sweet yellow onion (cut into rings)

1/3 cup dry bread crumbs

Salt and Pepper to taste



Methods:

Mix egg whites, salt and pepper. Dip onion rings into egg mixture and than coat with breadcrumbs. Place in single layer on greased baking sheet. Bake 10 minutes at 450 degrees.





ONION CUSTARD

Serves 6-8



Ingredients:

4-6 medium mild onion (thinly sliced)

3 Tablespoons unsalted butter

1-cup milk

3 Eggs



Methods:

In skillet, saut茅 onions in butter for 20-30 minutes. Cool. In bowl beat together milk and eggs. Stir in onions and transfer to greased baking dish. Bake 40-50 minutes at 325 degrees or until light golden.





PARSLEY NEW POTATOES



Ingredients:

2 cans (16 ounces each) sliced new potatoes (drained)

录 cup margarine (melted)

6 tablespoons fresh parsley (chopped)



Methods:

Place new potatoes in buttered casserole. Mix margarine and parsley and pour over potatoes. Bake 20 minutes at 350 degrees. Season to taste.





HOT CABBAGE

Serves 4



Ingredients:

3 cups Cabbage (finely chopped)

1/2 Teaspoon Salt

2 Tablespoons Vegetable Oil

2 Tablespoons Italian Salad Dressing



Methods:

Sprinkle cabbage with salt and set aside for 30 minutes. Heat oil in skillet until very hot. Add the cabbage and stir fry about 2 minutes. Remove and add Italian dressing.





PEACHY CARROTS

Serves 6



Ingredients:

1 pound package carrots (sliced and cooked)

1/3 cup Peach Preserves

1 Tablespoon Margarine (melted)



Methods:

Combine carrots with margarine and peach preserves. Cook over low heat until carrots are heated thoroughly.





CARROT CASSEROLE

Serves 6



Ingredients:

1 Pound Package Carrots (sliced, cooked until tender)

1/2 Cup Celery (Chopped)

1/3 Cup Onion (Chopped)

1/3 Cup Green pepper (chopped)



Methods:

Saute chopped celery, onion, and green pepper. Mash cooked carrots and mix with sauteed vegetables. Put in buttered baking dish. Bake 30 minutes at 350 degrees.



SNOW PEAS AND MUSHROOMS

Serves 4



Ingredients:

1 cup sliced mushrooms

2 tablespoons margarine

1/2 pound small snow peas

1 tablespoon soy sauce



Methods:

Saut茅 mushrooms in margarine. Stir in snow peas and soy sauce. Cook until crisp-tender. Toss and serve.





TOFU ENCHILADA CASSEROLE

Makes 10 鈥?12 Servings



Ingredients:

1 dozen corn tortillas

1 package (14 oz.) Hinoichi Firm Tofu

1 package Mozzarella soy cheese

1 can (8 oz.) black olives, drained and chopped

1 can (8 oz.) Jalapenos or green chilies, drained %26amp; chopped

2 bunches green onions, finely chopped

2 cans (16 oz.) Enchilada Sauce





Directions:

1. Preheat oven to 350 degrees.

2. Saut茅 both sides of the tortillas for 1 minute in olive oil and arrange 陆 of tortillas flat (side by side in a large casserole dish).

3. Proceed to make tofu mixture by combining tofu, soy cheese, olives, green onions, and Jalapenos or green chilies.

4. Pour tofu mixture on top of tortillas; pour 1 can of enchilada sauce evenly on top.

5. Place remaining tortillas on top and pour other can of enchilada sauce to top covering evenly.

6. Bake at 350 degrees for approximately 25 minutes.



OPTIONAL:

Top with sliced avocados, soy sour cream, and more green onions.

LoL! Your BF's cousin is the exact opposite of me! But my mother makes this veggie dish everyone loves!



Basically, you need:



鈥?2 cans of green beans

鈥?A can of cream of mushroom (preferably Campbells)

鈥?Crunchy French onions (French's works best)



Mix the green beans and cream of mushroom in a glass bowl (cuz u need to bake it) and top it off with the French onions. Place a foil over it and place it into the oven heated at 350 degrees. It should take maybe 15-20 minutes (I think, but check it frequently to see if it looks cooked). In order to tell the onions should be kind of brownish and crisp and the top of the sauce should look dark. It's really good and has nothing but veggies. :) Everyone, including your BF's cousin should like it.



For appetizers you could serve cold cuts and pickled lettuce and carrots. If not, try going for something like finger veggie sandwiches. Maybe cucumbers and peanut butter?



Since you love cheese, for another appetizer you could serve mini hot dogs with cheese cubes or crackers with ham and cheese or even cheese and salsa. Get creative! You can look for different ways to make cracker delicious on Rtiz cracker boxes! If you need more ideas, try magazines.



Desert, well, since you BF's cousin is a vegan and you want to serve something delicious, try maybe cut fruit like watermelons or strawberries. You can make strawberry shortcakes for everyone else and make a special strawberry dish for your BF's cousin.



Here's another idea for maybe drinks. Try make berry smoothies. They're highly nutritious and very good. :)

You could make something simple like pasta with marinara sauce, a gourmet salad, some fresh bread with olive oil to dip in instead of butter, maybe have meatballs on the side for carnivores.

i am vegetarian u can try indian cuisine something new and vegan.
I wont post the recipes in this venue, but I would stir fry whatever vegetables you have on hand . Then put them over a pot of Rice noodles, toss with olive oil and fresh parsley.

Next do potatoes and whatever vegetables you have on hand , canned or otherwise, top this with a sauce wade of cooked down tomatoes. Use as many fresh herbs as you can(parsley, cilantro.basil,etc) Also you could make a nice mushroom dish saute n olive oil nice fresh pepper and salted! Make Italian bread with copped tomatoes, garlic, basil salt pepper broil until brown. For dessert a fruit medley with sorbet. Viola! You dinner is perfect!
One of my favoutire vegie meals (I have a few vegie friends) happens to be vegan too...



Spaghetti with tomato and vegie sauce.



Ingredients:

Pasta (cooked as usual)

Onion, diced

Garlic clove, crushed

1 green pepper, cut into chunks

5-6 Mushrooms, sliced

Pre-made rich tomato/pasta sauce (just make sure it's not one with any extras added in like bacon or cheese!!)

Baby spinach leaves, whole

Oregano, Sage, Thyme, (any or all of these to suit your tastes)

Salt %26amp; Pepper



Method:

1. Fry up onion, garlic and pepper in a small amount of vegetable or olive oil (don't use butter!) until onion is cooked through.

2. Add mushrooms to fry pan and stir for a few minutes.

3. Add spinach leaves and stir until the leaves go limp.

4. Add the tomato sauce and herbs, stir through and bring to the boil.

5. Mix through your pasta and voila, easy tasty vegie/vegan meal.



The best thing about this is you can still serve some parmesan on the table for those who want it!! This way you will make the cousin feel comfortable that you haven't gone to too much trouble just for him!!

Sorry, I didn't read that you wanted entree, appetizer and dessert...



Entree you could stick with an Italian theme and have bruschetta (but buy a vegan loaf of bread I'm sure you can afford one special purchase):

Chopped fresh tomato and basil with olive oil on toasted bread.

And for dessert have a nice fresh fruit salad served with lemon gelato. (Real gelato is non dairy)
