Do you know of any good vegetarian foods or cookbooks?

I am so sick of eating nothing but side dishes and spaghetti! Do you know of any good vegetarian foods, recipes, websites, or cookbooks? I don't have much money so I can't afford the expensive stuff but I am starving all the time and I am sick of it.Do you know of any good vegetarian foods or cookbooks?
Vegetarian foods don't have to be expensive if you avoid buying the "fake" stuff. I'd also recommend you find a grocery that sells reasonably priced produce and has a decent bulk section that contains nuts, dried fruits, grains, flours, etc.

Some of my fav resources for food ideas:

http://101cookbooks.com [TLT sandwich is tasty]

http://blog.fatfreevegan.com [smoky refried bean soup, red bean chipotle burgers]

http://theppk.com

http://vegweb.com [orange tofu]

http://chocolatecoveredkatie.com [fudge babies, blended grains]

Cookbook:

Veganomicon [I love almost every recipe in this cookbook, the recipes don't include "fake" ingredients, making things a lot cheaper]

Vegetarian Sandwiches [lots of tasty stuff]

Nava Atlas' cookbooks

The 30 Minute Vegan [great raw treats]

Hope that helps!
I know how you feel! When I first became a vegetarian (years ago) I found it hard to vary my foods but with a little lesson in cooking more vegetarian foods I found I was actually getting more variety than I ever did as a meat eater.

Here's a good immediate source: www.vegweb.com

Lots of wonderful recipes for practically everything under the sun, The only draw back is that they are submitted by the users and, well, some of them simply don't understand how to write out a recipe or maybe they can't really cook all that well. You will find some great stuff and some not so great stuff. I almost always have to modify a recipe I find on there.

If you want recipes that have been tested, the Betty Crocker website surprisingly has a lot of vegetarian dishes.

You can also modify the meat recipes into a vegetarian dish by substituting tofu for ground beef or chicken, etc.

I have an amazing cookbook of recipes from the Moosewood Restaurant, called the New Recipes from Moosewood:

I would recommend the Tortino Di Verdure, which I made the other night and was amazing, and the Caserola Milanese, which I've made several times to start with.

Another good cookbook is The Giant Book of Tofu Cooking: http://www.amazon.com/Giant-Book-Tofu-Co鈥?/a>

If you don't really know how to cook tofu, this will show you through recipes and also through narratives simply about general tofu cooking.

Have a look at these websites:

Clearly, two of these are meant for vegans. However, they still have good ideas.

Have fun!
