Good breakfast and lunch ideas for a vegetarian?

I tend to have more trouble with breakfast than lunch. But both would help a lot. I have time to make my breakfast and lunch before school. So what could I make for school? I am a 15 year old vegetarian. Thanks! (: I have about 30 minutes or more to make both.Good breakfast and lunch ideas for a vegetarian?
I like to start off my mornings with a protein rich smoothie to help fuel me for the rest of the day. I usually have a smoothie with almond milk, peanut butter, bananas, oats and flax seed. I also eat Cream Of Wheat frequently in the morning because it is incredibly high in iron (a small bowl full is 30% of your daily iron intake) and I sprinkle on some cinnamon and fruit like apples, blue berries or strawberries. I sometimes make oatmeal pumpkin pancakes, they're delicious, I'll put the recipe down at the bottom of my answer if you want to try them out. The recipe uses a chia seed mix as an egg substitute, and although I'm a vegetarian I always make them the vegan way, but I'm sure you could substitute a real egg in there and it would be just as good.



I make veggie wraps frequently. You can get flat pitas and fill them with things like sliced carrot, green peppers, lettuce, spinach, pickles, onion, hummus or any dressing of your choice and sometimes I buy pita pockets, which are like pitas except they are thicker and open up at the top and you can stuff your food into them, and I usually cook up some mock meat like Quorn or Yves "chicken" and put it in there. Sandwiches are also a good option, just fill with your favourite veggies, and pack two different fruits, like an apple and a banana, to go with it. Making a big pot of soup or stew is also a good option. Vegetable soup broth, celery, carrots, potatoes, barley, rice, noodles, cabbage, that will last you for a few days.





Oatmeal pumpkin pancakes

鈥?/2 cup oats, divided

鈥?/4 tsp. baking soda

鈥?/2 tsp. cinnamon

鈥?/8 tsp. nutmeg

鈥? tsp. vanilla extract

鈥? tbsp. pumpkin puree

鈥? chia egg (1 tbsp. chia seeds mixed with 2 tbsp. water) -%26gt; or flax seed

鈥?-3 tbsp. almond milk

鈥? tbsp. agave (optional)



Directions:

1. Make your chia egg. Mix 1 tbsp. chia seeds with 2 tbsp. water and set aside to gel (~5 minutes).

2. In the meantime, using a food processor (a mini one works well for this!) grind 1/4 cup of the oats to a fine powder.

3. Mix the ground oats with the other 1/4 cup oats, baking soda, cinnamon, and nutmeg.

4. Continue by adding your vanilla, pumpkin, almond milk, and chia egg (and agave if you want a sweeter pancake).

5. Once the batter is mixed thoroughly, heat a nonstick griddle to medium heat.

6. Using a 1/4 cup measuring cup, portion out three equal sized pancakes and cook for three minutes.

7. Carefully flip the pancakes and cook for an additional 2-3 minutes, or until the pancakes set.

8. YUM!

steel cut oatmeal (not the instant kind)

you put boiling water on the oats and stir it for a few minutes (takes me about 7 or so minutes every morning) then add a tablespoon of pure cocoa powder and if you have then, sliced strawberries or bananas

you can also replace the water with almond milk if you'd like

a piece of toast with almond butter and some fruit is another good breakfast

if you consumer milk/dairy products, greek yogurt with fruit is also a healthy, quick option

still haven't figured out a good lunch though...:)

oatmeal is good for breakfast. I like to make it with vanilla soy milk and bananas :)

you can also try bagels with cream cheese or peanut butter, yogurt %26amp; granola, fruit, scrambled eggs - or even better, try tofu scramble!

If you miss having meat at breakfast, you can try fake bacon or the boca sausage patties haha I really like "fakin' bacon" actually



for lunch you can have salad, veggie sandwich, pb%26amp;j, or even something like hummus and pita bread
