I'm running a vegetarian Bed and Breakfast with dinner option, and I'm currently considering ways to prepare for the sudden guests who want dinner.
I'd like to think my lentil lasagna ticks a lot of boxes, but can you think of something even more handy? It should be something I can make ahead of time, freeze, and be able to defrost within an hour or so, and everybody should love it.What is a sensational, vegetarian dish that can also be frozen?
I have vegetable lasagna and freeze ,no problems.I think an hour is not enough time,
soups and smoothies.. get a really good blender (vita mix or health master) and keep good fresh veggies and fruits available. Anyone that gets hungry can mix items in these mixers and get fresh soups or smoothies (for the sweat tooth) and the soups can be frozen and heated up later. The smoothies can be re-blended to make them easier to eat (but are good frozen like ice cream)
I own the vita mix and love the foods I get.
Plus people usually are looking for something late at night and these are easily digested since the raw foods are already pureed.

Chili. Unlike lasagna, it won't change the texture after freezing and re-heating. You can even add the spices only when you re-boil it, allowing for you guests to choose their preferred level of spiciness. You can sprinkle something on top, like chopped parsley or grated cheese, to make it appear freshly prepared (I guess that's true for lasagna too).

My suggestion is to try it yourself. Freeze a batch and then reheat it for you to eat. If unacceptable to you, it certainly will not likely be good for quests. Get other family members or neighbors and see what they think. Give it a shot and good luck to you.
