What should imake for a vegetarian?

we are having a vegetarian couple over for dinner next week.



any good suggestions for a tasty dish??

it will be my fisrt time cooking a dish like this.What should imake for a vegetarian?
I made a broccoli, mushroom and rice casserole for my vegetarian friend.



2 cups rice uncooked

2 cans condensed cream of mushroom soup (I use the light version)

1 small package of sliced mushrooms

1 head of broccoli cut up into small bite sized pieces

1/3 cup Parmesan cheese

a few pats of butter

salt and pepper to taste



Preheat oven to 325 degrees.



Prepare two cups of rice.



Once rice is done in a large bowl mix the rice with the soup, the mushrooms, and the broccoli. Add salt and pepper to taste.



Spread rice mixture into a 9x13 baking pan, put a few pats of butter over the casserole, and sprinkle the cheese over the top.



Place the casserole in the oven and bake for 25-35 minutes (depends on your oven). Make sure the casserole is bubbly hot and the cheese has taken on a nice golden color.
First, think of what you're making for yourself and all other meat-eating guests.

You really don't want to make an alienated dish, make something close to what you're eating with a nice altered twist!

Vegetarian meals aren't something that you're completely clueless about! No one is! Think of your favorite meal, and consider how you could change it to make it vegetarian friendly.

You really don't want to go out to the grocery store, and buy specific vegetarian items that you will never use again for yourself.

It's definitely going to show alot of effort if you make sure they aren't stuck with something like salad, and rolls!

Do they consume eggs? This would make it easier!

Personally, I love eggplant parmesan! Maybe if you make that, as well as a pasta dish, with some meatballs (on the side) everyone can enjoy it! Also... some garlic bread and salad. I know I said not to stick them with these, but they'll also have the pasta and the eggplant to rely on!

If it's going to be on the casual side.... Why not veggie pizza?! You can make your own dough or if they eat egg/dairy/wheat you can use Boboli crusts....



Then pile on the veggies and cheese! You can get a little creative.... My favorite Boboli veggie pizza is: red sauce, artichoke bottoms (diced), black olives and green onions! Yum! You can also try eggplant or asparagus! Or get creative with the sauces... Pesto or a white garlic sauce.... Make two pizza's with different sauces/toppings for more variety and you can all share!

Plenty of dishes are vegetarian? Infact the majority of international dishes have meat as a minor influence in the dish if in at all is present. Spaghetti for example... just think of all the things you usually cook that don't have meat as the primary focus like tacos for example..and remove or substitute the meat. =)What should imake for a vegetarian?
for a side dish make a spinach salad w/ceaser dressing .YUM! put hard boiled eggs in it, croutons, tomatoes, and more or get a pre made one at Safeway or Costco
make a veggie soup

just boil some water and add a whole lot of veggies and add some sauce if youd like!
there is many different ways to make beans also, I love black beans cook with onions, garlic and ginger, throw in some fresh tomatoes serve with some flat bread and fresh fruit...
If they eat eggs %26amp; cheese why not make Eggplant parmasion?

Or Spinach pie?

If not why not make a vegetarian chilie? or Stuffed peppers (use mushrooms instead of meat.)

Proteins: Body's protein needs can be provided by either animal or plant sources. Mixed protein diet obtained from various plant sources is better than animal protein and is recommended in diabetes, renal diseases and liver diseases. Mixed protein diet from different plant sources has been the pattern of diet in India for all vegetarians.



Carbohydrates: Carbohydrates are mainly found in plant foods; like cereals, grains, fresh and dry fruits, legumes, vegetable, greens, nuts etc. plant carbohydrates include' large amounts of starches, sugar and fibers which are important for gut functions. The body is better suited to a high carbohydrate diet than a low carbohydrate diet. In fact 55% of the food intake should be carbohydrate. All animal products do not contain carbohydrate which is essential for body.



Fat: Plant fats differ from animal fats in two different ways 1) they are cholesterol free 2) they generally contain more polyunsaturated fat and less saturated fats. Plant fats usually have higher polyunsaturated fat value than animal fats.



A diet which is low in cholesterol and which contains fat of a high PIS value is associated with a lower incident of coronary health disease.



Vitamins and Minerals: plant foods are rich in many vitamins and minerals.



Vitamin D: Vitamin D is obtained by exposure of skin to sun light and this is not a problem in India.



Calcium: The vegetarians can meet their needs for calcium from dairy products. Riboflavin (Vitamin B2) Dark green vegetables are good sources of Riboflavin as are legumes and whole grain cereal.



Iron: The problem of iron deficiency is relatively common but vitamin C significantly enhances absorption of iron hence it is advisable for vegetarians to include with each meal a food high in vitamin C which as lime, citrus fruits or juices.



Zinc: Zinc is found in large number of plant foods.



Fiber: Fiber is found only in vegetarian food like whole grain cereals, legumes, greens, fruits, vegetable etc.



Thus in vegetarian foods all requirement of nutrition for body growth and maintenance is fulfilled. One can have a complete and balanced diet provided we take enough food which is as close to nature as possible in maintaining sturdy and disease free body. It is equally helpful in curing many diseases.



ADVANTAGES OF VEGETARIAN DIET:

More %26amp; more evidence is surfacing that directly links a prolonged non- vegetarian diet to diseases as cancers, heart diseases, diabetes, asthma just to name a few.

2. LESS HEART DISEASE: Because of low fat, saturated fat and cholesterol content of the vegetarian diet the risk of heart disease is lowered. High blood cholesterol levels are associated with increased risk of heart disease.



3. LESS CANCER: Up to 40% of all cancers are diet related. Cancer death rates have been associated with obesity and high fat / low fiber diet. Vitamin A %26amp; C are thought to be protective against colon cancer. Low fat diets protect against prostrate and breast cancer. Indoles, lignans, isoflavones, protease inhibitors which are present in plant foods and shown to be potent anti carcinogens.



4. LESS BOWEL DISEASE: Diverticular disease and appendicitis occur more frequently with low fiber intake as in meat diet.



5. LEES OBESITY %26amp; LESS INCIDENCE OF DIABETES: It is easier to plan a low fat diet for a vegetarian then for a meat eater. The fiber in plant food dilutes the energy %26amp; provides a satisfying meal without all the calories. Diabetes over the age of 40 seems to be related to obesity.



CONLUSION:

When activists like M.K. Gandhi, sports personalities like Martina Novratilova %26amp; Carl Lewis, beauties like Brooke Shields %26amp; Kate Winslet, physists like Edison, Albert Einstein %26amp; A. P. J. Abdul Kalam, religious leaders %26amp; mystics like Jesus %26amp; Osho can be legendaries in there respective fields taking the advantage of being vegetarian, Is'nt it more prudent on our part to switch over to vegetarianism %26amp; enjoy better quality %26amp; longevity of life.
Grilled vegetables like eggplant, portabella mushrooms, onions, tomatoes, artichokes, peppers. You can serve it with a light pasta even.
baked patatoes, beans, mac and cheese, salad, rolls with butter, or homemade bread yummmm. cheese n crackers, chocolate chip cookies, breadsticks, spagetti.
You can cook he/she the food made of bean curd,it's easy to make and nutritious.

~~~~vegetarian Manicotti~~~~

8 ounces manicotti noodles, uncooked (u can find them at wal amrt)

1 1/2 cups marinara sauce (vegetarian)

1 teaspoon dried basil

1 teaspoon dried oregano

2 cups shredded mozzarella cheese

15 ounces ricotta cheese

1 egg, slightly beaten

1/4 cup parmesan cheese

1 teaspoon nutmeg





Cook pasta according to package directions; drain.

Rinse in cool water.

Take Sauce and HALF of the basil and oregano.

Cook 3 minutes.

Makes 6-8 servings

Spread 1/2 cup of sauce mixture into 13x9 baking dish.

In bowl, stir together 1 CUP of the mozzarella, ricotta, egg, Parmesan, nutmeg and remaining basil and oregano.

Fill pasta tubes with ricotta mixture; place in dish.

Pour remaining sauce over pasta.

Sprinkle with remaining mozzarella cheese.

Bake at 350潞 for 25-30 minutes
Twice-baked potatoes, with a side of nice green salad (not just iceburg lettuce) using olive oil and red wine vinegar.

Are they vegetarian or vegan?

If they are vegan, try baking sweet potatoes or yams (twice baked uses sour cream and cheese in my recipe).



Ever try Eggplant Parmesian? Side of broccoli and carrots.

Cut the eggplant into slices, like hamburger patties, roll in milk and egg mix (2 eggs, 1 cup milk), pat on Italian bread crumbs. Cook (by pan fry or bake) When done, put a slice of swiss or motzarella chz on top.



Stir fry is a good all veggie thing. Serve with steamed rice.



I could go on, but now I'm hungry. :)
get creative try making a stir fry.



1. buy soy chicken bits or firm tofu to add and veggies and oil



2. get out your skillet and put oil on the skillet and add veggies and soy chicken bits but wait to add tofu if you add it



3. stir the stir fry, add sesonings and mor oil if nesscerry,get creative with the seasonings.



4. add tofu and cook untill slightly browned



5.serve with a smile and enjoy you may be surprised at how tasty it is
This is a super easy recipe, and it's really quick.



Ground "Beef" Quesadillas

You'll need:

4 Flour or corn Tortillas, whichever you prefer

A few slices of cheddar cheese

1 Package of Yves Veggie Ground "Beef" or other ground beef substitute.

2 sliced Pepperoncini peppers (Optional)



Heat up a tortilla on a skillet on medium heat. Make sure the pan is hot before you put the tortilla on.



Flip the tortilla once it is light brown, and add the cheese and ground "beef" then fold in half.



Cook until cheese melts and tortilla is light brown.



Repeat until you have four Quesadillas, then open them and put in the Pepperoncini, if desired.



Cut in half and serve.

Spaghetti dinner works good, and it's something you allready know how to cook, I'm sure. To make it vegetarian, just follow these steps.



1. Just boil noodles



2. Find some Prego without meat or cheese (in case they're vegan) read the ingredients. Most "garden style" or "mushroom" or "garlic and onion" etc.. are fine. IF they have meat or chese, they'll usually say so upfront. You can dress it up by sauteeing some finely chopped green pepper, onion, and garlic in a pan w/ a little oil, then adding the sauce to that. You can also add a little stewed tomatoes to make it nice.



3. Get some margerine (soy garden or smart Balance Light) that has no dairy (in case they're vegan) and use it on French Bread with Garlic Powder to make Garlic Bread. Butter the bread heavily, sprinkle with Garlic Powder heavily, bake 10-15 minutes, watching carefully. You can even turn the oven from "Bake" to "broil" the last 5 min, but then you have to watch SUPER carefully. (Literally every 30 seconds almost)



4. Make a nice Garden Salad with lettuce, tomatoes, olives, cukes, celery, carrot shreds. Find an Italilan salad Dressing w/o cheese (in case they're vegan) Might have to read a few labels till you find one tha doesn't have a bit of cheese.



5. Steam some Broccoli, Corn, Peas, or green beans



Optional: In a pan SEPARATE from the main sauce, you can make some meatballs that you and your spouse or any other meat-eating guests can add to your own spaghetti if you want. Just keep them separate from the vegetarian's sauce



Boom, you have a tasty, easy (about 40 minutes, very little work.) meal that vegetarians love.



P.S. If you know they're NOT vegan (meaning you know they eat milk and cheese) You don't have to be so picky about the margerine, salad dressing, and you can add crutons for the salad (most have chese). You can serve parmesean chese for the spaghetti, or get a sauce with cheese.
DONT MAKE SALAD.

i find that quite annoying when the only thing available to me is salad.

Tacos are a great menu choice especially for feeding a mixed group of vegetarians and non vegetarians. Just prepare all of the fixings, tomatoes, cheese, lettus, onion, re-fried beans, etc and let every one fix their own taco's. This way they can put on or leave off what ever they like or don't like. Makes everyone happy.
