Is there vegetarian recipes out there for the everyday person?

My girlfriend is a vegetarian due to dietary issues. However, she is able to eat seafood but it's not really something we want to eat all the time. The same goes for me with Tofu, it's fine but it's not something I want all the time. Is there any recipe books or online websites that could fit our diets? Any other ideas?Is there vegetarian recipes out there for the everyday person?
After working in a grocery meat department, I had a vegetarian phase. What I found worked best for me was to take normal recipes that may normally include meat, and find a suitable substitute for it. For example, I would regularly make portabella mushroom lasagna, and even my picky, meat-loving friends agreed that little taste was sacrificed. If mushrooms don't exactly fit your recipe, you can try using beans instead. Beans will fill you up, and will help to provide you with necessary protein that you would miss out on from non-consumption of meats.
