My mom is looking for a cookbook for Christmas for my 23 year old brother. He lives on his own and is a vegetarian. She wants to get him something that has quick inexpensive meals since he also works full time. She doesn't want anything that has squid or anything like that in it. I've looked at a bookstore, but if I find one with quick meals they aren't inexpensive and if I find one that's inexpensive the meals may take hours to prepare! One option would be to put together your own cookbook. There are nearly endless resources online with very fast and inexpensive vege. meals. You could also talk to vegetarian freinds and ask them to share their recipes and add them to a binder or recipe file book.

The Vegetarian Epicure by Anna Thomas. A lot of college kids used that book when it was first printed and it's full of easy, cheap, _good_ vegetarian food.
Vegetarian Meals Good Housekeeping Favorite Recipes. I have used many of the recipes. They are easy and inexpensive to make and many (like soups, chili's) can be frozen in individual servings to be used later. The book is $14.95. I think I got it at borders, but they have it on amazon, etc.
