I'm looking for something healthy and vegetarian that I can make for lunch tomorrow. It should be something that doesn't take a really long time to cook. I have most of the basic ingredients like tofu, beans, lentils, etc.

Put a Morningstar farms chick patty in the microwave for 1 minutes. Put on a bagel with some mayo and lettuce and you have a sandwich
Peanut butter and jam sandwich
Any kind of soup that has no meat in it. Check labels. Some are Progresso Minestrone, Lentil, and Pasta E Fagiola. You can doctor up these already hearty soups by adding your own extra pasta, veggies, etc.. as you cook it on the stove top. YOu can get a huge meal by doing this.
Beans and brown rice - add hot sauce and veggies.

Stirfrys, bean burritos, samosas, curries, vegetarian lasagna, tofu sandwich with veggies and your favourite condiments, the list is not that short.

You can make bbq tofu sandwich, burritos, veggie wraps, spaghetti
Rice and Chick'n' Nuggets(simulated flavor and contains absolutly no meat).

Whole wheat pasta with a yummy peanut butter sauce and soy sauce :)
