Any healthy eating vegetarian food ideas?

I am a vegetarian and I typically workout three times a week - I believe I get good amounts of exercise, but not enough nutrition - I struggle for ideas of things to cook.



Things I cook regularly: mash and veggy sausages, tomato pasta, cheese pasta, fajitas.

I'm a vegan, and I'm really involved in cooking and food now. While I was vegetarian, I wasn't quite so conscious of what I was eating, but now I am I've found loads of great veggie meals!



1. Quinoa with adzuki beans and sweat chili sauce. SO nice! High in protein, the Aztecs called it the "Mircle grain". Cook it like you would rice, then stir in the beans and chili. it has a great flavour and texture



2. My favourite ready meals. Linda McCartney foods, which you can find everywhere. I love the pies, and the sausages. I also love Fry's Vegetarian, because you can read the ingredients on the back and think "I could make that" which you can't with most ready meals.



3. Risotto. Add what you want, i love some veg stock, mushroom, butter beans etc. It's really tasty, filling, fun to make, and it's easy to pack in lots of nutritious foods!



4, Foods for if you're doing a lot of excersize (gym, running etc) You need complex carbs, which means brown rice and pasta.



5. Snacks. I know you're only veggie, but I would buy Alpro Soya yoghurts. They have lots of protein in and can help keep you healthy. They're made for veggies and vegans to make sure you have what you need, and they're really tasty! I always buy a bag of fruit and nuts to snack on like crisps- they have fibre and vitamins, and are good for your skin too! :P



6. Stir fries. Buy yourself some rice noodles and soy sauce and get frying! It's easy, you can chuck a load of veggies you like in, and it's really tasty :)



I can't stress the impotance of mushrooms enough! They have B12 and are really good for veggies. If you don't like them, consider re-thinking that. I didn't, but I've found that, cooked right, they are gorgeous!

You can try to make garden burgers with vegetable crudites or you can buy this book called The 3hour diet cookbook. Its a really good book by jorge cruise and it has a lot of veggie stuff.

Something really yummy (I am a veggie too) is Veggie Lasagna! You can buy sheets of pasta at most supermarkets. To make the sauces, cook spinach in a large pan, before turning off the heat, pour in some cottage cheese and stir through, turn off heat and leave in pan while you make the next sauce, you can make a tomato sauce (not ketchup, just a pasta sauce) yourself, or buy one from the shops. Then just layer your lasagne together. First a layer of tomato sauce, then pasta sheet, spinach, pasta sheet, tomato sauce, pasta sheet etc. till you get to the top of the lasagne tin. Sprinkle some mozzarella cheese over the top and cook in the oven till crispy on the top (like a brownish gold colour)



Hope you like this recipe! If you do, yo can always make lots of small ones, and freeze them in the freezer until ready to eat. Make portions that suit you. Or you could just make a big one for a dinner party or something...

I am not vegetarian but I cook quite a lot of vegetarian dishes, these are some of my favourites



spinach and red pepper (or other vegetarian) lasagna,

easy vegie pizza using pita bread,

zucchini and cheese fritters, (grate 2 or 3 zucchini, 50g Parmesan cheese, 2 eggs, bit of flour, salt and pepper, nutmeg, fry in patties on pan - yum!)

roast vegie medley (parsnip, sweet potato, potato, red pepper),

cauliflower soup,

pumpkin soup

spinach and ricotta pie (spanikopita)

as a vegetarian the center of your diet in my opinion should be legumes, beans, rice and seeds. (lentils are seeds i just found out!)

There are many kinds of beans. you can have a different type every night for a month. i grew up not knowing how to cook beans but i learned from a really great book. its all about beans and bean-recipes vegetarian ones!

beans give you the carbs for the energy you need to live your life plus protein and fiber. way better for you than those yucky packaged vegetarian burgers full of fat and salt and chemicals.

try some bean recipes and if you like them, invest in a pressure cooker. will cook beans in 30 min instead of 5 hours..

vegan ribs, vegan crab cakes, salads, soups, bean %26amp; tortellini, and my favorite- vegan chicken wings!!
how about baked yam or potato fries. Bake them with some olive oil, sesame seeds and rosemary. delicious.
