What are simple vegetarian recipes that a teen can make, with a limited amount of time?

I am 15, and am a vegetarian. Nobody in my family is, so it is hard to find things to eat. Im getting pretty tired of veggie burgers, and beans. What are simple vegetarian recipes that a teen can make, with a limited amount of time?
Easiest--

The freezer section at whole foods has lots of vegetarian things you can get and experiment with until you figure out what you like.

Here's a place you can go to get recipes that cater to all forms of vegetarian:

Acorn squash OR yams with brown sugar; the two foods are almost identical in flavor. Just broil them in the oven in a glass pot with tinfoil for a few minutes.

Put some carrots in a bag with a little bit of water %26amp; microwave-steam them, then poor melted butter %26amp; honey on them.

Mixed fruit salads; pear, banana, apple, grape, %26amp; nectarine diced. If you want, toss in a little bit of cool whip %26amp; wallnuts.

Steam some fresh green beans with sliced almonds, they don't take too long.

Potato-macaroni salad takes a while to make, but it lasts for days. Just steam some potatoes, boil some shell pasta, sliced onion, diced garlic, pimento, diced olives, shreaded carrots, add stone-ground or dijon mustard with only a spoon full of mayo to make it less fattening.

Steamed cabbage in butter is very good.

Boiled artichoke with fresh garlic is so good.

Steamed asparagus with parmisan cheese. Don't steam too long, or it will loose its' crunch.

Steamed broccoli %26amp; cauliflour with white, jack, colby, or marble cheese sauce.

Breaded baked zuccini.

Banana bran muffins (use at least 5 fresh bananas).

Sashimi-free sushi; just cucumber or scramled egg atop vinager rice rolled in delicious dried kelp. The dried kelp sheets are also very tastey. They're called Nori %26amp; cats also lik them.

Celery with beanutbutter or cheese.

Apples with peanutbutter.

Deviled eggs; hard boiled eggs, mix the yolk with sweet pickle %26amp; a tiny bit of mayo, then restuff the egg white.

Chinese egg-drop soup.

Japanese miso soup, red or white. Don't add salt!

Mandarine salad; lettuce, spinach, mandarine oranges, sliced almonds, shreaded carrot, dry lowmein/ramen noodles oriental dressing.

If you have lots of time, spinach manicoti with alfredo or linguini sauce.

Traditional lentil soup. (now comes in cans) Should be made with veggie both.

Roasted chopped potatoes smothered in italian herbs %26amp; glazed in olive oil, with sliced onion %26amp; garlic.

Grilled pear salad, if you're at a restaurant that offers it. (ask for extra pear).

Jello (like Strawberry Kiwi) with a full can of Dole tropical fruit. What are simple vegetarian recipes that a teen can make, with a limited amount of time?
Pasta is about the simplest vegetarian meal. Pasta with marinara sauce, pesto, or tossed with olive oil and sauteed vegetables.

Rice dishes are also easy to make. Rice pilaf is a great easy meal. You can also buy rice pilaf mixes at supermarkets that come with a packet of herbs and flavoring to add in. That's easy.

A baked potato makes a good hearty meal when served with sauteed veggies or a salad. You can also stuff the potato with cheese and herbs.

Vegetable soups can be bought canned or made at home. To make from scratch, prep time usually isn't that bad but they do need some time to simmer on the stove. If you make a soup or stew on the weekend it can last you all week long.

Frozen stir-fry mixes can be whipped up in no-time and served with some rice or udon noodles.

Frozen vegetable entrees are out there. Look for Amy's Kitchen entrees in the frozen section of supermarkets and health food stores. Or look for frozen pasta dishes, ravioli, Indian dishes, etc.

If you live by a Trader Joe's, look for their Indian Fare dishes. They're in the section with rice and pastas, and they come in foil bags that you boil. Delicious Indian curries that take only a minute or two to make and can be served with rice or pita.

roast some grape tomatoes in the oven:

put a pint in a bowl with salt, pepper and a few tablespoons of olive oil, spread them on a baking sheet and roast at 350 degrees for about 30 minutes, (till they start to flatten)

Boil some orzo, drain it and throw in the roasted tomatoes, drizzle in some more olive oil.

Add onions if you like to roast with the tomatoes, garlic, black olives, endless possibilities.
Stir-fry! Chop up lots of veggies and cook over a high heat very quickly (they should still be a bit crunchy). You can flavour it so many ways (my fave is sweet chili sauce and lots of fresh ginger), and mix it up with tofu, tempeh, noodles, and rice. It only takes a short time to cook (most of the time will be chopping veggies), is very healthy, and delicious.
Hopefully this can help you, at least to some extent...

Make friends with Tofu. Plentiful, available almost everywhere, great protein source and totally versatile. Here are some awesome recipes that run the gamut from quick and easy to moderately complicated and all are well tested and totally delicious.

Vegan Maryland NOT Crab Cakes

Here is a Mid-Atlantic Classic with a Vegan Twist! In your vegetarian kitchen, cauliflower stars in our vegan Maryland NOT Crab Cakes. These golden patties are protein packed with tofu, brightly colorful with the confetti minced veggies and scrumptious beyond belief!

Boil 3 Lbs. Yukon Gold Potatoes in Filtered or Spring Water. Pour off water. Place potatoes in a large basin or bowl.

Add:

3 Lbs Firm Tofu

2 Cups Old Fashioned Rolled Oats

Dehydrated Potato Flakes

1/2 Cup Vegetarian Chicken Stock Powder

1/4 Cup Granulated Onion

1/2 tsp. Cayenne Pepper

Wearing clean rubber gloves coarsely mash potatoes with your hands. Blanch* 1 head cauliflower flowerets. Add to mixture crumble into the potatoes and oatmeal being careful not to lose the "crablike" texture of the cauliflower. Add 1 cup minced carrots, zucchini, yellow squash, red and green peppers. Add up to 2 cups potato flour or flakes until mixture is firm but not stiff. Pour onto a pie plate 3/4 cup potato flour of flakes, 1 Tbs. granulated onion and 1/4 cup dried parsley flakes. Mix.

Using a spring action ice cream scoop or disher, make balls of the potatofu mixture; flattening them while maintaining their circular shape. Dredge in the potato flour, parsley and granulated onion mixture. Fry until golden in canola oil. Serve with tarter sauce made of Nasoya Nayonaisse and sweet pickle relish, cayenne and a squeeze of fresh lemon juice, or a well dilled B茅chamel - add 1 Tbs. minced fresh dill and a dash of cayenne to the white sauce. Also a squeeze of lemon. For a great variant use Dill Pickle juice as half of the liquid in the B茅chamel.

The "Not Crab Cakes" freeze well and can be made in advance. A delicious "non-fish" course, they are quite nice plated on a platter, garnished and served on a buffet also.

1 Package Firm Tofu

2 Tbs. Extra Virgin Olive Oil

1 handful Grape Tomatoes

1 tsp. Chili Powder

Salt and Pepper to taste

Splash Shoyu

Five grains Black Salt* (optional)

*Black Salt is available at Indian Grocery Stores. It has a high Sulfa content so you will need to use only as much as fits on the tip of a sharp knife. It is the Sulfa content that pulls the tofu into the familiar smell and taste of 鈥榚gg鈥?

In a frying pan saut茅 1 Cup sliced button mushrooms with freshly chopped garlic in Extra Virgin Olive Oil until golden. Remove from the pan and reserve. Next add to the pan 1 small onion sliced thinly from stem to stern, and half each of red, yellow and green peppers cut into small chunks. Saut茅 until the peppers are soft and the onion has becomes transparent. Add a handful of whole grape tomatoes. Stir.

Add 1 Tbs. Turmeric and 1 Tsp Chili Powder, and crumble in 1 package Firm Tofu. Mix through the spice and vegetables until the tofu is heated through and well colored, and the tomatoes begin to pop. Add the Mushrooms, a splash of Shoyu and salt and pepper to taste. Plate and serve with toast, or muffins.
