I'm in college %26amp; i purchased a vegetarian cookbook but most of the time I won't have time to cook that stuff- sandwiches are the simple go-to food. But i don't want to just eat PB%26amp;J or grilled cheese. I really like the Mediterranean Veggie from Panera Bread as well but I can't buy that all the time. Anyone know of any good sandwiches? I can't stand mushrooms so those are out. I will choose a best answer =)What are some good vegetarian sandwiches?
I am not sure if you're familiar with Giada on food network, or just food network in general. However if you go to foodnetwork.com you'll find tons and TONS of recipes that have no meat(: I find really cool ones. I also have vegetarian cookbooks that I check out from my library(: Good luck!
take 2 tortillas, sprinkle some cheese and chopped red onions on the one and heat it in the microwave for about 30 seconds and the cheese will melt, then put some sauce or seasoning on the second one and place it down real hard [sauce side down] on the tortilla you just heated and heat it again for 30 sec.

Slice broccoli and cauliflower florets length wise, slice cucumbers, avacado and tomatoes. Season some cream cheese with a small amount of season salt. Spread the cream cheese inside of a pita pocket. Add the sliced veggies and some sprouts. Voila!What are some good vegetarian sandwiches?

I like taking a toasted tortilla wrap and spread it with hummus and sliced tomatoes.

haha i LOVE those sandwiches! and i make them at home but i put a healthier twist on it, i make theem on whole wheat bread and use 1/2 and avocado, cucumber slices (or pickle) feta cheese (i use fat free) and lettuce. You mite want to add some tofu (extra firm) for the protien. YOu can also make an array of different sandwiches useing the tofu, some vegan cheese or laughing cow spreadable cheese (the light ones come in all different flavors) along with some veganaise (vegan mayo) or hummus ( i LOVE hummus of all different flavors on my sandwiches) and a mix of different veggies such as cucumbers, tomatos, spinach, onion, bean sprouts and red pepper. Mix it up and try out different combinations.Here are some of my favorite combinations:
Strong cheddar or jalepeno flavored cheeese with lettuce and cilantro lime hummus or jalepeno hummus
Tofu, laughing cow spreadable blue cheese, cucumbers merinated in balsamic vinegrette, spinach, and onions
Tofu, vegan cheese, veganaise, red peppers, hummus, and onions
Avocado, bean sprouts, vegan cheese, spinach and tomato

Make gourmet grilled cheese sandwiches, with or without the cheese. You can sautee veggies like bell peppers, zucchini, tomatoes, whatever you like. And you can try different cheese combinations like Munster, mozzarella, provolone, etc. And sauces will really spice things up. You can go Mediterranean with olive oil, Greek olives, spinach and feta. Or Asian with veggies cooked in teriyaki sauce. I also love grilled peanut butter and jelly sandwiches or grilled peanut butter and banana. You can also do sliced apples and pears with cheese. Oh, and one really strange but tasty idea is to make two pieces of french toast and then make a sandwich with them using raspberry jam and brie cheese or Swiss cheese and top it with powdered sugar-like a Monte Cristo-it is amazing!
