What are some good vegetarian breakfasts?

When we do have the time to make a real breakfast, its always eggs and a meat product. I've been burned out on the same breakfast all the time, and was wondering if there were some good vegetarian breakfast ideas out there that my parents might be willing to try(we're omnivores, though i'd consider myself an aspiring vegetarian and plan on making the change as soon as I move out).What are some good vegetarian breakfasts?
Breakfast is arguably the easiest meal to make vegetarian. I'd stay away from soy bacon or sausage, there's no need to use an inferior product when there's so much good stuff to choose from.



My favorite breakfasts are sweet potato waffles with fruit on the side, breakfast burritos in a whole grain tortilla with black beans, salsa and scrambled tofu with hashbrowns (I'm vegan, you could just use eggs), grits with tomatoes, mushrooms and chives or steel cut oatmeal with brown sugar, cinnamon and raisins.



Most weekday mornings, I just make a smoothie with soymilk, dark grape juice, and frozen fruit (usually strawberries, pineapple or mango, banana and either blackberries or blueberries).
I make tofu scramble a lot. Sweat out some onion in olive oil, add diced tofu and maybe garlic if you like, and then tomato, spinach, mushrooms, or whatever else you like. Season to taste throughout, and I always add some oregano and cumin, and basil if I have it on hand. Make some breakfast potatoes and you're good to go!



Pancakes are also vegetarian, and I have a lot of friends who like the Morningstar sausages, though I'm not a fake meat fan myself.

Unstuffed Cabbage:

Ingredients



* 5 cups shredded cabbage

* 1 (12 ounce) package vegetarian burger crumbles

* 2 (14.5 ounce) cans Italian-style stewed tomatoes

* 1/2 tablespoon lemon juice

* 1 tablespoon brown sugar

* 1/2 cup chopped fresh dill

* 1/2 teaspoon ground allspice

* freshly ground black pepper to taste



Directions



1. Heat a large skillet over a medium heat. Stir in cabbage and let it cook 4 minutes; or until wilted and lightly browned.

2. Stir vegetarian burger crumbles, tomatoes, lemon juice, brown sugar, dill, allspice, and pepper into the mixture. Bring the mixture to a boil, cover and reduce the heat to low. Let the mixture simmer 5 minutes before serving.













Vegetable Medley :



Prep Time:20 Min

Ingredients



* 1 tablespoon olive oil

* 2 yellow squash, sliced

* 2 zucchini, sliced

* 1 onion, chopped

* 1 green bell pepper, chopped

* 2 cloves crushed garlic

* 1 (16 ounce) can diced tomatoes

* 1/2 teaspoon dried basil

* 2 teaspoons dried oregano

* salt and pepper to taste

* 1/4 cup grated Parmesan cheese



Directions



1. Preheat oven to 325 degrees F (165 degrees C).

2. In a large saute pan heat olive oil over medium heat. Add squash, zucchini, onion, green bell pepper, and garlic. Saute until all vegetables are soft. Add tomatoes with juice. Season with basil, oregano, salt, and pepper.

3. Transfer ingredients to a glass baking dish. Bake for 20 minutes in the preheated oven. Sprinkle with Parmesan cheese and bake another 10 minutes.















Vegetable Hash :

Ingredients



* 3 tablespoons olive oil

* 2 tablespoons butter

* 1 pound Yukon Gold potatoes, diced

* 1/2 pound fresh shiitake mushrooms, diced

* 1 red bell pepper, diced

* 1 small acorn squash, diced

* 1 shallot, finely chopped

* 2 teaspoons garlic powder

* 1 pinch salt

* 1 pinch ground black pepper

* 1 cup chopped kale

* 4 sprigs fresh sage



Directions



1. Place oil and butter in a large skillet over medium heat. Melt butter and mix in potatoes, mushrooms, pepper, squash, and shallot. Season with garlic powder, salt, and pepper. Cook 25 minutes, stirring occasionally, until potatoes are tender.

2. Mix kale and sage into skillet. Continue cooking 5 minutes, until kale is wilted. Serve and enjoy!





Potato Pancakes :

Ready In:45 Min

Ingredients



* 5 pounds potatoes, peeled

* 1 onion

* 3 eggs, beaten

* 2 1/2 cups dry pancake mix

* 2 teaspoons salt

* 1 teaspoon ground black pepper

* 1 tablespoon vegetable oil



Directions



1. In a food processor grate potatoes and onion. In a large bowl combine potatoes, onions, eggs, pancake mix, salt and pepper.

2. Heat oil in a large skillet over medium heat. Spoon potatoes into skillet and cook as you would pancakes, for 3 to 4 minutes on each side.











Fluffy Pancakes:



Prep Time:10 Min

Cook Time:10 Min

Ready In:25 Min



Servings: 8 pancakes



Ingredients



* 3/4 cup milk

* 2 tablespoons white vinegar

* 1 cup all-purpose flour

* 2 tablespoons white sugar

* 1 teaspoon baking powder

* 1/2 teaspoon baking soda

* 1/2 teaspoon salt

* 1 egg

* 2 tablespoons butter, melted

* cooking spray



Directions



1. Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".

2. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.

3. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

I make scrambled eggs and I put green onions and parmesan cheese in the mixture before I cook it. OMG it's delicious.



You can add mushrooms for extra protein and variety.



I like to make wheat bran muffins with blueberries or apples and nuts.

You can dice a fresh apple and roll the pieces in flour to make the apple muffins.

Blueberries work best in batter when they're frozen overnight beforehand.

Then they don't bust when you mix it all up.



Banana bread is good.



Sometimes I just saute some mushrooms in a skillet with soy sauce and butter.



Omelettes are good, with cheese, bell peppers, mushrooms, avocado, green onions, or asparagus.



You can do a pita bread sandwich, I like to have a brocolli and cheese sandwich and heat it up in the microwave for a bit so the cheese melts. Scrumptious. And I always have coffee with breakfast, but of course that's optional.

I often have beans on toast if i feel like something hot, or veggie sausages in a bap with plenty of ketchup!

Sometimes I have a load of fruit with yoghurt, sometimes mashed banana on toast or toasted bagel. Teacakes or hot cross buns are also nice as a treat.

Make a veggie omelet, with toast and home fries. You could make crepes with fresh fruit and a dusting of powdered sugar. make a tofu scramble. bake some muffins.make french toast or pancakes. have a quiche or frittata.
