My boyfriend and I have recently gone vegetarian and are having a difficult time with deciding what to eat for lunch. So far, every day it's been grilled cheese sandwiches and PB%26amp;J.

Ratatouille is nice on toast or with potatoes.
If you want to be more adventurous take a look at "Rose Elliot's Vegetarian Meals in minutes" Cookbook. It is well illustrated and will give you plenty of tasty ideas.
Another thing I have tried recently, is to slice some potatoes and fry them in a little Satay sauce (which you can buy ready made really cheap.) Some pasta with a little pesto stirred in also works as an easy filler.
Supermarkets sell afffordable packs of stir fry vegetables, which you can cook in a couple of minutes.
Quorn Burgers will cook well in a microwave , and you can buy the Quorn equivalent of flavour chicken pieces for lunches.
Cous cous is very quick, but be wary of packet cous cous which is very high in salt.

Bean burritos are good, healthy and quick to make! I use black beans, tomato salsa, onions, and shredded cheddar cheese. Roll in a tortilla and bake for 10 minutes.
Also, black bean and corn salsa w/ cheese enchiladas are really good.
You can make vegetarian chili the night before and have it for lunch the next day or two. Use black beans, kidney beans, red peppers, green peppers, onion, garlic, zucchini and diced tomatoes. Season with cumin, chili powder, cayenne, and paprika. It is delicious with bread, rice or tortilla chips!

Burritos or quesadillas are always quick, protein filled and delicious.
You can also get fake sliced meat for sandwiches, which may sound kinda gross, but I think it's pretty good. I actually just made myself a sandwich for lunch tomorrow with fake bacon in it.

Coconut Red-Lentil Curry
* 1 medium onion, finely chopped
* 2 tablespoons vegetable oil
* 1 tablespoon finely chopped peeled fresh ginger
* 2 garlic cloves, finely chopped
* 1 teaspoon ground cumin
* 1/2 teaspoon ground coriander
* 1 teaspoon turmeric
* 1 teaspoon salt
* 1 (2 1/2-inch) fresh jalape帽o or serrano chile, finely chopped, including seeds
* 2 cups water
* 1 1/2 cups dried red lentils (10 oz)
* 1 (13- to 14-oz) can unsweetened coconut milk
* 1 lb zucchini (2 medium), cut into 1/4-inch dice
* 1 cup loosely packed fresh cilantro sprigs
Cook onion in oil in a 3 1/2- to 4-quart heavy pot over moderate heat, stirring occasionally, until edges are golden, about 6 minutes. Add cumin, coriander, turmeric, salt, and chilli and cook, stirring, 1 minute.
Stir in water, lentils, and coconut milk, then simmer, covered, stirring occasionally, 5 minutes.until lentils are tender, about 15 minutes. Season with salt and serve with cilantro sprigs(optional) scattered on top.

three bean salad ( any beans you want+chopped/cookes carrots, peas) fresh parsley, lemon n lime juice, a little soy mayo, and salt n pepper
homemade hummus blended with roasted veggies.(last about 5 days in the fridge) use in a wheat wrap with lettuce, sprouts, and peppers.
pasta primavera with red or white sauce
cold lomein salad with veggies, tofu, soy sauce, and sesame seeds. last 5 days in fridge
Try cooking up some AAA Alberta beef and some bacon on the BBQ. Then toast up some fresh rye bread (or other) and toss down some lettuce, the bacon, tomatoes, and sauce of choice, don't forget to slice the steak and toss it down... A fresh vegetarian lunch...
Anything except meat of course. Soups,salads,sandwiches,pizza,burritos,
tacos. Just replace the meat with a veggie substitute.
salads are always good, especially when you mix it up and try some salads from different cultures. then there's always fruit, vegetables, bread, pasta.. there's tons of things out there
If you want something hot try foods by Morning Star. I love them and they don't take long at all! They have "meats" made out of veggies :) my fav is the buffilo wings.
