Every time I try to eat a vegetarian diet I end up eating a ton of frozen mock meats and other unhealthy foods as well as several carbs. I'm not a good cook and need easy, simple dinner ideas as well as healthy snacks. Also, I'm very cautious with ethnic foods.
Any book or websites that might help? How can I be a healthy vegetarian?

That gives you plenty of recipes. Don't listen to the people that go on about protein, they're so misinformed it hurts. Beans, Quinoa and nuts are fantastic sources of protein. Mock meats are good in most respects but tend to be very high in salt. The only things you will be deficient on with a poorly planned vegetarian diet are:
B12 - get this from yeast extract or fortified cereals.
Iron - fortified cereals and leafy greens - make sure you get plenty of vitamin C with it
Zinc - eggs, chickpeas
Vitamin D - The sun, mushrooms, fortified cereals
Selenium - Eggs and brazil nuts
Omega 3 fatty acids - walnuts, hemp seeds, linseeds, avocado, eggs
Iodine (possibly) - Iodized salt

Make sure you get all your protein. If you like cottage cheese it has a lot of protein.
